Christy Cassidy broke her arm and has been struggling with cooking. She found a recipe that she could make in a slow cooker overnight but needed help with chopping. Unfortunately, she accidentally set the wrong settings on the Instant Pot, resulting in an unfinished beef barley soup for lunch. She hopes it will be ready for dinner. Welcome back to What's for Lunch. I'm Christy Cassidy. Today is Thursday, September 28, 2023. The beginning of August, I broke my arm. There's things that are still beyond my ken, such as chopping vegetables. I did manage to slice an eggplant last week. That was a real accomplishment. I found a recipe that didn't take a whole lot of chopping and dicing. All you had to do is put it in a slow cooker overnight. So because of my broken arm, Nan chopped up the onions, the carrots, and the celery. I snipped some thyme from the pot on the balcony. Nan cut up some chuck that we had in the freezer. Perfect. Everything's set to go. We would put the soup on low in the Instant Pot for overnight cooking. This morning when I checked it, I thought, oh, actually the flavor of the soup was quite good. I mean, I thought I could use a little more cooking. And by the time we got to lunch, forget about it. It wasn't done. I had put the wrong settings on the Instant Pot. The beef barley soup was kind of a bust. We're hoping that it will be done in time for dinner tonight. I cut up a pear, and that was lunch. We'll see what happens for dinner.
