Prashant is a restaurateur from Lucknow who started his own business after studying hotel management. He initially wanted to be a commercial pilot but was unable to due to being color blind. He then joined the Merchant Navy but was also unable to continue due to the same reason. He decided to pursue hotel management and got a job in China doing export marketing. However, he realized that his passion was in the restaurant industry and started his own quick service restaurant in Lucknow. He mentions that the hotel industry in India has low paying jobs and limited growth opportunities. Hi Prashant, and for our viewers, I would like to quickly introduce you. Prashant is an old friend and a restauranteur from the city of Lucknow. He owns a couple of brands, a couple of houses, a couple of franchisees out of the city of Lucknow. So Prashant, just for our viewers, real quick, if you can introduce yourself and from where do you come from? I am from a middle class family and I am the first generation business person in my family. And I am still learning a lot of things. So the conversation that we are going to have is about the learning that I have learnt from the market. And I did my hotel management from IHM Goa in 2010. And after that I have done a lot of things, I have done a lot of jobs. After that, just when I got graduated, I got confidence and I started my own. Always wanted to be a restauranteur? Not always, it was like, it is a journey, I can't say that I always wanted this. It happened. So what do you always wanted to be, if I may ask? I never aimed for anything, my criteria was something different. My criteria was I should have good money. How early did you think you should have good money? I think around class 6 or 7. And I was like, I want to travel the world and it should be a uniform job. If it is a job. Uniform? Yes. Somewhat armed or anything, it should have a uniform. So how did you end up being at IHM from somebody who always wanted to be in armed forces? Or unquote unquote uniform job? Right, very good question. Initially I was like, I wanted to, I applied for commercial pilot. So roaming around the world, good money and uniform, all the checks were done. But I was found colour blind later. So I was not able to join that profession. So later I looked for something which is professional. And because I have already wasted a year. So meanwhile I joined Merchant Navy. Initially you were a part of Merchant Navy. I was part of. If I can just put it into a journey. Post 12, you joined Merchant Navy right away. Right, right. And Merchant Navy was a swift path or. It was very smooth. Very smooth. Right. Going good. Right. And how many years of Merchant Navy? One year, it was pre-C I did from Maritime Training Institute. It is a Navratan company, STI government owned company. So I did my pre-C from there. Okay. So after one year I was detected colour blind. Okay. One year later. Later, after doing this thing. Okay. Pre-C training. So then I was not allowed to join the ship. Okay. Right. Then I was like, what to do now? So I thought of like I have already wasted one year. So I cannot do engineering. Otherwise I will be like behind all, behind my friends. Right. So I was looking for three year course. Okay. Right. And it should be a degree and I should get a job after three years. Okay. Right. So they were very... And you were going for nowhere in this? Nowhere. Nowhere. Nowhere. Right. Okay. So then I was looking for something like what can I do? Then I found like Hotel Management was a good option. Okay. Right. So I joined Hotel Management. I did, I sat for an examination, All India examination and I got through. So after that I came to know that this stream is not for me. I landed somewhere else where I never wanted to. Right. And I think it is like we don't have that exposure early in life. In specifically in middle class family. Okay. That we don't know like what all options we have in our life. Very true. Right. So until the point for most of you who already know me. I have done B.Com from MIT. I am under pursuit of my, I am say MBA. So until two years after my job, I was able to figure out ki actually yeh kar sakta hu. Right. This is something I am good at. Maybe I am good at. Okay. Not certain yet. So until how did you get confirmation ki IHN ke baad. Maybe. IHN ke baad it was like a roller coaster ride. I went to China for two years. China. Right. I was doing export. Hotel Management. No, no. It has no relation with Hotel Management. Because just I don't want it to ki mere ko hotel industry mein kaam nahi karna hai. Okay. First it is looked as a chotu wali industry. Yeh chotu idhara wala. Right. So I never wanted to join this industry. So I went to China through some jack. One uncle turned up and he helped me. Right. So I went there, had a good time and very good exposure. And what were you doing there? I was exporting marketing goods globally. Okay. Right. So it was a very good experience just after my graduation. And that actually opened my eyes. Okay. Like karna ki hai zindagi mein. Okay. Right. Then I went there. I did lot of things. In fact there was a hilarious episode. I lost my passport in China. Right. Quite a big story. Right. And it was like it is a different story. I talked entirely. And then I came back to India. One of my uncle came to me like kya kar rahe ho? I said uncle passport ho gaya. I am going back. To kis industry mein kaam kar rahe ho? I said uncle mein trading kar rahe ho. Export kar raha ho. He said beta tu ne padahi to hotel management ki hai. To yeh kar rahe ho. A very old guy in my colony. You were back in Lucknow. I was back in Lucknow waiting for my new passport. Okay. Right. So this guy is like a wing commander from air force. He is a retired wing commander in my colony itself. Okay. Right. So one Friday evening he told me like tum kya kar kya deviation jo hai? Padhahi kisi aur ki ki chahate kuch aur the. Jaa kahin aur rahe ho. Kuch ek jo apni core banao na. It is the time to like apni core banao uspe chalo. Right. To mein hai ka pehle dhoond ne to do uncle. Right. To then he guided me like beta jis ke padhahi ki hai. Usme karo to zyada achcha karo. You have invested 3 years. Yaha pe jo salaries hongi wo 6,000-7,000 se start hoti hai. As low as 6,000-7,000. Still. Still. In 2024 I am talking. And you were thinking about this back in 2000? 2010. Usme 4,000-5,000 hoti thi. And from 4,000 we have reached 7,000 in 14 years. Right. That's all. This is the like misery about this industry. Fresh graduate. Like anybody entering this industry starts from here. And do you think it's still necessary ki wo 7,000 se hi start kare? There are programs like very few people get into it. Like management training programs. Usme bahut ki kam jo hai like 1%-2% bache jaate hain wahan pe. Jo graduate hote hain. Lekin iss industry mein bahut major chunk associated hai. Right. They start from here. Okay. I am guessing jo 7,000-6,000 pe start karte hain. I am guessing he is a helper. Right. Splash. Right. Assistance. Splash. Other things. Assistance is like comes after a long time. Accha. It may start from like cleaning tables. Okay. Steward jisko bolte hain service mein. Right. If he is in kitchen or something in back area. Then he may be washing dishes. Okay. Right. Because agar clarity ki bhaat karein is course ki. So chef banna hai do hotel management. Hotel khunna hai hotel management. Restaurant khunna hai hotel management. Shahid itna straightforward nahi hai. Bahot nahi hai. Kyuki hotel management bahot saare bachhe isliye karte hai. Kyuki papa paise laga denge. Papa ne kahe hotel management ke baad mein. Aapko restaurant khun jayega. Aur it is entirely different what is taught inside the college. Right. Duniya aise nahi chalti hai. Duniya is very different. And competition bahot zyada hai. Aur jo kitabon mein badha jaata hai. Wo yaha pe nahi hota hai. It may be in 5 star hotels. Yaha pe aap job karoge. Wahi choti salary se start karoge. You will slog around 20-25 years. Tab jaake shahid general manager ban paoge. 25 years general manager. Right. And average pay of a general manager. Agar small 5 star hotels. You can divide in between class A, class B and class A hotels. Right. General manager is like. First I tell you what is a general manager. He is like sole authority in that property. Single property sole authority. Highest most authority. Right. Toh waha pe he is paid like if it is a 5 star hotel. He must be getting around 2-3 lakhs a month. 2-3 lakhs a month. Right. After like slogging for 20 years, 25 years. 25 years. Right. 25 years from 7000 to 2000. Right. So this is the journey. I mean very few people land up there. Very few. It is not like everybody will like do. Because the pyramid is like. Woh kaafi short hota jata hai. Right. Pochte pochte. Drop off. Right. So this is like. So I will get back to my story. Right.
