Now, my name is Nadia and in this chapter I want to share our recipe with you. I would like to comment that I love that this cake does not need an oven since when I arrived in Morelia I did not have an oven and I miss making desserts. So, I used to provide pancakes or this recipe. So, no-bake carrot cake recipe. Ingredients. 3 carrots, 1 cup of flour for cakes, 1 cup of sugar, 1 cup of milk and 3 eggs. And 1 teaspoon of oil, 1 teaspoon of cinnamon, 1 teaspoon of salt. And for the frosting, 100 grams of pitted peaches, 50 grams of butter, 3 cups of sugar and 1 teaspoon of vanilla and 1 carrot. We start by peeling and grating the carrots with the help of a grater. To continue with the preparation of the cold carrot cake, we place the eggs, sugar, milk and oil in a deep container. And with the help of an electric mixer, we beat until our ingredients are perfectly integrated. Once our mixture is ready, we add the sifted flour with the help of a strainer and we integrate again perfectly. Finally, we add the very well grated carrots so that the mixture has a crunchy texture and this will be our dough for the no-bake carrot cake. And we pass a little butter in the pan, add a little of the mixture and let it simmer on both sides. We repeat this step until we finish all the dough for the easy carrot cake and obtain several sheets of sponge cake. And to prepare our carrot cake topping, we take the cream cheese and the butter and beat it perfectly until a kind of cream remains. Then add the sifted sugar and mix again. To finish the frosting for the no-bake carrot cake, add the grated carrots to half of the frosting and leave the other half plain white. Once the cake sheets and the frosting are ready, place one on a plate and add a layer of carrot frosting on top. On top of the frosting, we add the following plate and the more frosting. We do this until we have no more. This is how we will form our carrot cake. Finally, we cover with the white frosting and decorate with the carrot frosting. And ready!
