Amelia and her mom, Priscilla, discuss their Mexican heritage and the traditional Mexican breakfast dish they enjoy making together called Tepuigal Tepanchanos. They use eggs, tomatoes, onions, cilantro, jalapeno, and Mexican cheese to prepare the dish. Priscilla learned the recipe from her own mother and they often make it on special occasions or when all the kids are home. Making everything from scratch involves tasks like chopping vegetables and making tostadas. Hello my name is Amelia Townsend and I'm here with my mom. Hi. Okay if you could just tell us a little bit about yourself and where you're from and also the food that we're going to be talking about. Okay my name is Priscilla Townsend. I was born in Los Angeles but my parents are from Chihuahua Mexico and we are going to be making waffles. How do you prepare the food? We prepare it using eggs. Eggs go on top of the tostada. For the tostada we fry it in cooking oil and to make the sauce we use tomatoes, onions, cilantro, jalapeno and we cut that into little small we dice it up into little small pieces. We fry it first then we add tomato sauce and salt and pepper to taste and we top it off with Mexican cheese. What cultural group does this food come from? Tepuigal Tepanchanos is a traditional Mexican breakfast so it was I learned how to make it from my mom and it's one of the few dishes that all of the kids in our family love so it's we often make it on special occasions but when all the kids are home and the girls are home from college we try to make it every Sunday and it's fun just because the girls like to help out with the cooking process and since everything is made from scratch there's always something to do like chopping all of the vegetables or making the tostadas from scratch or helping with even the little help with bringing out the ingredients from the fridge. Great thank you so much for sharing.
