In late winter or early spring, we start preparing the sugar shacks for maple syrup production. Surprisingly, a single maple tree can provide us with 10 to 20 gallons of sap each season without harming the tree. Additionally, there are four different grades of maple syrup. As late winter or early spring rolls around, that's our cue to fire up the sugar shacks, getting ready for when the sap starts flowing.
